When choosing greens for your salad, skip the iceberg lettuce. Iceberg has a high water content (as do all greens), but provides only small amounts of nutrients. Even the fiber content is minimal. For more nutrition and more flavor, choose salad greens such as spinach, romaine, and arugula among others that are not as commonly used. Any green that has a more intense color will also have significantly more nutrition. Darker colored greens have twice the fiber of iceberg. The good news about all salad greens, including iceberg, is that it is low in calories and can help with satiety.
